Cool the soya and filter the water and wash them thoroughly with clean water. Squeeze the water of soya well. Now in a bowl, mix the turmeric, red chilli powder and salt with a little water and make a paste. Put soya chunks and optional vegetables in the same bowl and mix it properly. So that the spices can be well-mixed in all. Leave the mixture aside for at least half an hour. After that, heat the oil in the pan, when the oil becomes hot, put the curry leaves and put the spicy soya chunk mixture. Moderate the fire and fry these things for about two minutes until the dry pieces of soya dry out. Add a little water and cook it so that the vegetables get cooked well. After this, lay a paper towel in a bid to remove it so that excess water becomes dry. After this, put it in a serving bowl and hot serve by garnishing them with round chopped onions and curry leaves.
