Material for the external crisp layer:
1½ cups of flour
3½ tbsp oil Salt

 

For spicy stuffing:

1/2 cup papadhi gathia or sev (roasted powdered) or roasted gram flour
1½ tablespoon date tamarind sauce
1/4 tsp turmeric powder
1½ tsp red chilli powder
1/2 tsp Garam Masala Powder
1/4 tsp black pepper, crushed
1/2 tsp Amchoor Powder
 1 tsp sesame
1 tbsps dry coriander seeds
1 tbsple fennel
1/2 tsp poppy seeds
1/4 cup cashew (cut into thick thick pieces)
10-12 raisins
2 tbsp almonds (cut into thick thick pieces)
2 tablespoon ground sugar (powder)
Salt 1 tbspn + oil to fry

Method:

Grind sev or gathiya in a mixer or cook the gram flour until turns golden. Heat 1 table spoon oil on medium flame in a pan. Put the grinded gathiya and other ingredients, except the tamarind chutney, sugar and salt; Fry on low flame for 30 seconds. Insert gathiya (or roasted gram flour) in it, add date tamarind chutney, sugar and salt. Mix well and fry for a minute.

Turn off the gas and let it cool for 4-5 minutes. Dry and spicy stuffing is ready for filling. Take flour, salt and 3½ tbsp oil in a pan and mix well. Pour hot water as required and knead soft dough in slightly harder (like paratha dough). Divide the dough into 16 equal parts and make the dough from each one. T

ake one piece and keep it on top of the floor. Make it spread into 3-4 inches diameter. Put 1-2 tsp mixture in between the Puri. Wrap the mixture from all the side and seal its edges and shape like a ball. Heat the oil in a pan to fry. Keep the flame medium. When the oil gets hot, put 5-6 raw balls in it and fry until light brown in low flame.
