Ingredients
- Dried yeast – 4 teaspoons
- Caster sugar or brown sugar – 60 g
- Wholemeal Flour – 150g
- White flour – 150 g
- Ground all spice – 11/2 teaspoon
- Ground cinnamon – 1 teaspoon
- Bananas – 4 ripe
- Whole egg – 1 plus egg white – 1 (beat together)
- Vegetable oil for greasing
Method
- In a bowl take 75 ml of lukewarm water and dissolve 1 teaspoon of sugar, then sprinkle the dried yeast and set aside for 15 minutes.
- In another bowl sift in the wholemeal flour and white flour, all spice, cinnamon and sugar.
- Mash the banana and add to the flour and stir and add the egg and mix again.
- Add the mixture in the centre.
- Then make a dough (Add little flour if mixture is too wet)
- Knead for 5 minutes.
- Transfer the dough to a boil greased with oil. Cover the dough with a moist cloth and leave to rise for 2 hours.
- Grease a loaf tin measuring about 19 × 12 × 9 cm (7½ × 4½ × 3½ in)
- Remove the dough and knead for another 1-2 minutes and place back, cover and leave for 45 minutes.
- Preheat the oven at 200 degrees C.
- Bake the bread for 40 minutes.
- Let it rest in for 20 minutes before serving
- Spread with your topping
- Serve
