Ingredients: 4 pieces of ladi pav ½ cup dry garlic chutney ½ cup green chutney ¾ cup potatoes (boiled and mashed) 2 green chillies 1 tbsp garlic (minced) 1 tsp ginger (minced) 1 tsp mustard seeds ¾ tsp turmeric powder ¼ tsp Hing 4 curry leaves ½ tsp salt ½ tsp black pepper 2 tbsp vegetable oil ½ cup cheese (grated) ¾ cup besan 1 pinch baking soda Method: 1. Grind the green chillies, ginger, and garlic into a paste 2. Heat oil in a pan, add mustard seeds and when they start crackling, adding and curry leaves and sauté for 2 minutes 3. Add green chilli, ginger and garlic mixture, sauté for 2 minutes 4. Add potatoes, half of the turmeric powder, half of the salt, pepper and mix well 5. Remove from heat and let it cool down, divide into four portions 6. Flatten each portion and add about 1 tbsp of grated cheese in the middle, roll the mixture into a ball 7. Combine the besan, the remaining salt and turmeric powder, baking soda, oil and water to form a batter 8. Dip each of the round potato mixture balls into the batter and deep fry until golden brown 9.
