Ingredients: 2 baby eggplant 2 medium zucchini 4 tablespoon red wine vinegar 2 cup sliced thick summer squash 1/2 cup basil 5 teaspoon virgin olive oil black pepper as required 900 gm Italian plum tomato 2 clove garlic 6 cup arugula 1 tablespoon red pepper 4 pieces baguette kosher salt as required

For Garnishing 225 gm mozzarella

How to make Ratatouille Salad Step 1: To prepare this yummy salad recipe, first, wash all the veggies in running water and then thickly slice the zucchini and summer squash. Then cut the plum tomatoes in half and eggplants into round slices.

Step 2: Now, take a deep bowl and add all these veggies in it. Pour over the virgin olive oil, red pepper and salt as per your taste and mix well all the ingredients. Once done, toss the mixture with basil, arugula, and vinegar.

Step 3: Now take the baguette and brush it with the olive oil and grill till lightly tossed from both sides. Peel the garlic and finely chop it in a small bowl. Once done, brush both sides of the bread with the chopped garlic cloves.

Step 4: Once done, cut each baguette in half and transfer it to serving plates. Spoon the salad over the baguette bread and garnish with grated mozzarella cheese. Serve immediately and enjoy
