Ingredients:

1 cup brown rice ½ cup mixed vegetables (carrots, peas, beans) ¼ cup yellow moong dal (split yellow gram) 1 onion, finely chopped 2 cloves garlic, minced 1-inch ginger, grated 1 green chili, chopped ½ teaspoon cumin seeds ½ teaspoon mustard seeds 1 teaspoon ghee (clarified butter) Salt to taste Water as needed

Method:

Wash brown rice and moong dal thoroughly and soak for 30 minutes. Heat ghee in a pressure cooker and add cumin seeds and mustard seeds. Once they splutter, add chopped onions, minced garlic, grated ginger, and green chili. Sauté until onions turn translucent. Add mixed vegetables and sauté for a few minutes. Drain the soaked rice and dal and add them to the cooker. Mix well. Add water, salt, and pressure cook for 3 whistles. Once done, let the pressure release naturally. Serve hot with a side of cucumber raita.
