Fluffy Bran muffins made with buttermilk, unsweetened applesauce, raisins, molasses and pumpkin pie spice will leave you with watering mouth. Ingredients: 1½ c. all-purpose flour 1 c. wheat bran 2 tsp. pumpkin pie spice 1 tsp. baking soda . 13 tsp. kosher salt 1 c. buttermilk 1 large egg ¼ c. unsweetened applesauce ¼ c. molasses ¼ c. granulated sugar 1 tbsp. canola oil 1 tsp. pure vanilla extract ¾ c. raisins Direction: 1. Heat oven to 350°F. Line a 12-cup muffin tin with paper liners. 2. In a large bowl, whisk together the flour, wheat bran, pumpkin pie spice, baking soda and salt. 3. In a second bowl, whisk together the buttermilk, egg, applesauce, molasses, sugar, oil and vanilla. Add the buttermilk mixture to the flour mixture and stir until just incorporated; fold in the raisins. 4. Divide the batter among the muffin cups and bake until a toothpick inserted in the center comes out clean, 25 to 30 minutes. Serve warm !
