Veg Kurma Recipe - A great dish for vegetarians!

For the Masala:
1/2 cup fresh or desiccated coconut 12-15 cashews 1 garlic clove 1 inch ginger 3 to 4 green chillies coriander leaves 1/2 tsp fennel seeds 1 tsp coriander seeds 2 tsp poppy seeds 1/2 cup water to blend

Vegetables:

1/2 finely chopped onion 1 carrot cubed 1 finely chopped tomato 1/4 cup fresh or frozen peas 7 to 10 cauliflower 1 chopped potato 4 chopped beans

Other ingredients:

1 inch cinnamon 3 cloves 1/2 its pepper pinch of turmeric powder 3/4 tsp kashmiri chilli powder salt 1 cup water 2 tsp oil few coriander leaves

Method:

Blend all the masala ingredients in a blender to a fine paste.

Take a kadai and add 2 tsp of oil Add the cinnamom stick, cloves and pepper and saute for a while Add onions and saute till the onions turn golden brown Now, add the tomatoes and saute till the tomatoes turn soft Add the vegetables Add turmeric,chilli powder and salt Add 1 cup of water and cook for 15 minutes Add prepared masala paste and simmer for 10 minutes Finally, garnish with fresh coriander leaves and serve.
