Coconut Rice is a healthy main dish recipe that you can enjoy on any occasion. This Kerala-style rice recipe is truly delicious that you can enjoy it without any curry or side dish. Ingredients of Coconut Rice

300 gm parboiled rice

1 tablespoon urad dal

1/2 tablespoon chopped green chilli

4 tablespoon grated coconut

3 tablespoon ghee

2 red chilli

1 tablespoon mustard seeds

1 tablespoon chana dal

1 strand curry leaves

1/2 cup coconut milk

salt as required

For Garnishing

2 tablespoon coriander leaves

How to make Coconut Rice

Step 1

Put a pan on medium flame and melt ghee in it. Then, add mustard seeds, urad dal, chana dal along with chopped green chilli and curry leaves in the pan. Saute them for a few seconds and then add the parboiled rice to the pan. Toss well and cook rice for 2-3 minutes.

Step 2

Now, add grated coconut along with salt as per your taste and coconut milk. Mix well all the ingredients and cook rice for another 5 minutes. Put this pan aside and on the same burner, put another pan and fry the red chillies in oil over medium flame. Garnish the rice with them along with coriander leaves.
