Ingredients of Mango Rabdi Gateau

1/2 litre milk

1/4 teaspoon powdered spice cardamom

1 1/2 cup fresh cream

200 gm condensed milk

1 teaspoon baking powder

60 ml margarine

1 chopped into cubes mango

1/2 cup sugar

1 dash nutmeg powder

1/2 cup mango puree

140 gm self-raising flour

1/2 teaspoon baking soda

1 1/4 teaspoon vanilla essence

1/2 cup water

How to make Mango Rabdi Gateau

Step 1

Take a bowl, add flour, baking powder and baking soda. Add condensed milk and margarine. Mix it well with a spoon.

Step 2

Then add 1 tsp. vanilla essence and water. Beat the batter well and ensure there are no lumps formed. Keep it aside.

Step 3

Pour the mixture into a greased and dusted tin. Bake it in the oven at 200 degree C for 10 minutes. Then reduce the temperature to 175 degree C and bake for further 15 minutes.

Step 4

When cake leaves the sides of the tin and is springy to touch, remove and place the tin on a rack and tap the cake out carefully. Let it cool.

Step 5

Now pour the milk into a broad non-stick pan, simmer until it reduces to one third. Add 6 tbsp. sugar, cardamom and nutmeg powders. Cool the rabdi and keep aside.

Step 6

Now whisk ½ cup cream till it becomes soft. Add rabdi and mango puree. Mix well. Chill and keep aside.

Step 7

Chill the remaining cream, then add the remaining sugar and remaining vanilla essence. Whisk it well.

Step 8

Now slice the sponge cake horizontally into two. Add soaking syrup and spread a generous layer of mango rabdi and top with some mango pieces. Garnish with whipped cream and serve chilled.
