Khichdi is one of those comfort foods that you can enjoy in any season you want. Masala Khichudi is one such dish and a speciality of Bengali cuisine, which has a perfect balance of flavours. The fragrance of the dish is such that you will be tempted to eat this rice recipe. Traditionally, this main dish recipe is cooked using Gobindbhog rice, which is originated in Bengali. However, you can also use basmati rice for this dish. You must try this rice recipe and treat your loved ones with this delicious dish.

Ingredients of Masala Khichudi

2 cup basmati rice

1/2 tablespoon turmeric

1/2 tablespoon red chilli powder

1/2 tablespoon cumin seeds

1 bay leaf

1/2 tablespoon grated ginger

1 chopped potato

1/4 cup peas

1 cup moong dal

1/2 tablespoon cumin powder

1/2 tablespoon garam masala powder

1 tomato

2 green chilli

1/2 cup chopped cauliflower

1/2 cup chopped carrot

How to make Masala Khichudi

Step 1

Wash basmati rice and moong dal together in running water in a large bowl. Next, put a pressure cooker on medium flame and heat oil in it. When the oil is hot enough, fry the veggies (cut medium size each) and take out.

Step 2

Now, take a bowl and add turmeric powder, cumin powder, ginger paste, garam masala, red chilli powder, salt, and sugar. Mix a little water and make a paste with the spices and keep aside.

Step 3

To the cooker, add cumin seeds, bay leaves, the spice paste and saute for a minute. Then, add chopped tomatoes and cook for another minute.

Step 4

Now, add the rice and dal in the cooker and fry them for about two minutes. Afterwards, add all the fried veggies and add water to the cooker. Stir to mix and close the lid of the cooker. Pressure cook the rice on for two whistles and the switch off. Let the steam release on its own.

Step 5

Now, prepare the tempering for the rice. For the same, melt ghee in a pan and saute cumin seeds and green chilli in it for 1-2 minute. Serve hot with brinjal fritters and spicy curd.
