Ingredients of Mexican Wedding Cookies

50 gm powdered sugar

1 cup all purpose flour

1/2 cup pecan

1/2 cup icing sugar

1 teaspoon vanilla extract

salt as required

1/2 cup unsalted butter

How to make Mexican Wedding Cookies

Step 1

To start with, place a pan on medium flame. Put the pecans in the pan and roast for about 4-5 minutes or until they dark and are fragrant enough. Once done, take out, keep aside and let them cool. Next, transfer the nut in a plastic bag and crush them with the help of a rolling pin. Crush until you get a crumby texture.

Step 2

Next, take a blender and add butter and 50 gm of sugar to it. Blend well. Add vanilla extract and blend again. Now add all purpose flour along with the salt and blend until it takes the shape and texture of a soft dough.

Step 3

Stir-in the crushed pecan. Place the dough on a plastic sheet. Wrap and flatten to reduce the thickness to 1 inch. Put it in the refrigerator for about 15 minutes in order to make its texture a bit firm. Preheat the oven to 170 degree Celsius.

Step 4

Once done, take out the dough, roll out small sized balls and coat them further with the icing sugar. Your next step would be to arrange the balls on a silicon baking sheet. Bake for about 10-12 minutes straight. Take out, let them cool and serve with tea or coffee.
