Introduced in Thailand, Thai red and green curries are popular all over the world. They are known for their spice levels and amazing aromatic flavours. Perfect for a cold weather, this Thai Green Chicken Curry will keep your warm from inside. The main dish recipe is super easy to prepare at home. It's highly recommended to serve this curry with hot steamed rice for a satisfying meal.

Ingredients of Thai Green Chicken Curry
2 stalks lemongrass
2 teaspoon peppercorns
1 teaspoon cumin seeds
3 cloves garlic
2 ginger
2 1/2 tablespoon Thai green curry paste
200 ml chicken stock
2 spring onions
1 1/2 tablespoon lime juice
1 teaspoon coriander seeds
7 birds eye chillies
3 shallots (small onions)
1 1/2 cup coconut milk
400 gm chicken breasts
2 dry red chilli
coconut water as required

For Garnishing
2 tablespoon coriander leaves

How to make Thai Green Chicken Curry
Step 1
Start by making the curry paste by adding lemongrass, lemon juice in a small bowl. Mix it and keep it aside for sometime. Now, place a pan over medium flame and add peppercorns on it along with coriander and cumin seeds. Dry roast for a minute and then transfer it to a separate small bowl.

Step 2
Add lemongrass, bird eye chillies, ginger, shallots, spring onions, garlic and dry red chilli in a food processor and process as smooth as you can till the mixture is slightly coarse. Put this paste in a jar and keep it aside. Now, remove the thick cream from coconut milk and pour it into a large frying pan over medium flame.

Step 3
Add the paste prepared in the jar to this pan and cook for 2-3 minutes over medium flame. Add the chicken pieces now and stir well. Now, add coconut water, Thai green curry paste to it along with chicken stock in it and mix well over medium flame for 5-7 minutes. Make sure the sauce is slightly thin.

Step 4
Your Thai Green Chicken Curry is now prepared. Transfer it to a serving bowl and garnish with coriander leaves and red chillies. Serve it with hot steamed rice and enjoy.
