How to make Aloo Malai Kofta

Step 1

Start by placing a pan with water over medium flame and add potatoes to it. Once the potatoes have boiled, take them off from flame and peel them. Next, take a large bowl mash the potatoes and paneer in it. Add the grated carrots, the green chilli, corn flour and salt in this and mix all the ingredients well. Once this mix is ready, make small balls of it and set these aside.

Step 2

Meanwhile, place a pan over high flame and add refined oil to it. Once the oil has heated up, one by one, add the balls in it and fry them until they turn golden brown and crispy. Once done, place these balls in a plate lined with absorbent paper to soak up the excess oil.

Step 3

To make the grave, add ghee in a pan and place it over medium flame. Once the ghee has melted, add the cinnamon stick, bay leaf and black cardamom in it. Saute them until you can smell the aroma and then add in the ginger paste along with garlic paste in it. Keep mixing these ingredients so that they don't stick to the pan. Next pour in the chopped tomatoes, along with salt and water and stir. Keep stirring and mix the gravy well. Once done, strain the gravy through the strainer in a bowl and set it aside.

Step 4

Now, heat butter in pan over medium flame and add the strained tomato gravy along with tomato puree, dried fenugreek leaves, honey and red chilli powder. Mix these well and let it come to a boil. Once it thickens, add cream to it and stir it constantly. Next, add in the koftas and let it cook for some time.

Step 5

To serve, transfer the aloo malai kofta in a bowl and garnish it with some onions rings along with coriander leaves. Relish it with some chapatti or rice and enjoy!
