Curries have always been a popular dish globally and this mouth-watering Andhra recipe has been carved out of the 29th state of India, Telengana. The state is known for spicy dishes and so is this chicken curry recipe! Try it.
Ingredients of Telengana Chicken Curry
700 gm chicken
1 teaspoon powdered turmeric
2 cinnamon stick
5 clove
9 curry leaves
2 tablespoon vegetable oil
3 tablespoon mustard oil
1 1/2 ginger
5 green cardamom
5 peppercorns
2 cup water
For Marination
3 onion
3 dry red chili
1 1/2 teaspoon cumin seeds
2 tomato
2 1/2 tablespoon poppy seeds
4 cloves garlic
3 teaspoon red chilli powder
2 teaspoon coriander seeds
1 cup grated coconut
1/4 cup cashews
For Seasoning
salt as required
garam masala powder as required
For Garnishing
mint leaves as required
How to make Telengana Chicken Curry
Step 1
Chop the onions, ginger, garlic cloves, tomato, red chilies, grated coconut and cashew nuts in a bowl. Add these chopped ingredients along with red chili powder cumin seeds, coriander seeds, poppy seeds into a grinder to make a thick paste. Meanwhile, boil the chicken and pat it dry. Cut the chicken into pieces.
Step 2
In a large bowl, add the paste keeping a little aside for further use along with mustard oil, turmeric powder and chicken pieces. Mix everything well, so that the chicken gets evenly coated by the masalas. Move this bowl to the refrigerator for thirty minutes and then store it at room temperature.
Step 3
Now, in a separate pan, pour the vegetable oil and heat it over a medium flame. Once hot, add the chopped onions, curry leaves and salt as per your taste into the pan and fry. Add the remaining paste and keep stirring it. Add half cup of water into it as well. Now add the marinated chicken pieces into the pan and mix well.
Step 4
Cover the pan using a lid and let it cook for another few minutes over a medium flame. Remove the lid and keep stirring the whole mixture inside the pan in order to prevent it from sticking at the base of the pan. Sprinkle garam masala powder on top and your Telengana Chicken Curry is ready to be served. Garnish it with mint leaves.
