If you are thinking of eating something different today, then you can make Afghani Parda Pulao. It is a bit difficult to make but still you can make it at home and feed it to your family members. This pulao is packed with the goodness of spices, ghee and of course juicy mutton pieces and that makes it so delicious. Let us know how to make Afghani Parda Pulao.

Ingredients of Afghani Curd Pulao-

500 gms mutton pieces
1 or 1/2 basmati rice (soaked)
2 tbsp ghee
1 tbsp almond paste
1 tsp garam masala
1 tsp coriander powder
1 tbsp ginger garlic paste
1 medium onion , cut into pieces
2 green cardamoms
4-5 cloves
10 black pepper
1 tsp cumin
1 inch cinnamon
2 bay leaves
2-3 green chilies
1 tsp saunf
1 tbsp lemon juice
water as needed
flour for covering
2 tsp sugar
2 cups flour
salt to taste
Onion (fried)
1/4 tsp black sesame
Milk1/2 cup
 lukewarm water

Method of making Afghani Parda Pulao- First of all take a vessel, put ghee in it and wait till it melts properly. Now add whole spices like cardamom, black pepper, cumin, cinnamon, green cardamom and black cardamom. Let them explode After that add onion and fry till it becomes golden. Now add mutton mix bowl and mix well till the color changes. Add ginger-garlic paste, green chillies, fennel powder, coriander powder, salt and mix everything. Now add water, mix well and bring to a boil. After this, cover and cook on low flame for 1 hour or till the meat becomes soft. Once done, take out the cooked meat in a bowl and keep aside.

Now for rice, take a vessel, add rice, water in it, mix well and cook till it comes to a boil, till the water reduces. Cover and cook on low flame till 3/4th is done and keep aside. Now put ghee in the pan and let it melt. Add onion and fry till golden brown. Add green chili, curd and mix well. After this add cashew paste, almond paste and mix well. Now add garam masala powder, salt, lemon juice, mix well and cook for 2-3 minutes. Then add the cooked meat and mix well.

Now add water, mix well and cook on high flame till the oil separates and keep it aside. For the dough1. Add instant yeast, sugar, lukewarm water to the bowl and mix well, let it rest for 10 minutes. Add all purpose flour and salt, mix well and knead until a dough is formed. Now grease the dough with oil and keep it covered for 50 minutes. After this add cooking oil and knead the dough again. Now sprinkle all purpose flour and roll it with the help of rolling pin (18×18 inches) (in circular motion). Now put the kneaded dough in a bowl and spread it well.

Then add cooked rice, cooked meat, fried onions, cooked rice and spread evenly. Now add the fried onions and fold the edges closed and grease with oil and then invert on the baking tray (10x10 inch). Now apply milk on the dough with the help of a brush and sprinkle black sesame seeds. Finally bake in a preheated oven at 180°C for 10-15 minutes.
