For this, you have to press Digital Crown in Apple Watch. Then tap in the upper left corner and click "I'm OK." You can disable it by tapping on.

Apple Watch easily detects your movement, then does not call the emergency number or send an alert, unless you have set the emergency service automatically. Not only this, if you do not move for one minute after hard fall, then it calls the emergency number. After the call, Apple Watch also sends your location to the emergency number.
