Cheesy Corn Stuffed Jacket Potatoes-
3 large potatoes, boiled with peels
Salt to taste

For the stuffed mixture:
1/2 cup boiled sweet corn seeds
1/2 cup finely chopped capsicum
1 tbsp finely chopped parsley
2 tsp finely chopped garlic
1 cup grated processed cheese
1 tbsp fresh cream
1 tsp butter
Salt and fresh black pepper to taste

How to make- First of all heat the butter in a wide non-stip pan, add garlic and saute for a few seconds on a medium flame. After this, add corn, capsicum and parsley and saute on a medium flame for 2 minutes. Now remove from the heat, add cheese, cream, salt and pepper and mix well. After this, divide the mixture into 3 equal parts and keep it aside. Now, make lattice-like incisions on the upper part of each potato. Now press the potato from the bottom, cut and open it so that there is a place to fill it. Now sprinkle a little salt on each potato and fill each potato with a portion of the mixture. Then place the filled potatoes on a crushed baking tray and bake in a preheated oven at a temperature of 200°C (400°F) for 4 to 5 minutes or until the cheese melts. Take the ready-to-eat cheesy corn stuffed jacket potatoes, now serve it by decorating it with cherry tomatoes.
