Those of you who love to eat desserts to give a perfect end to their meal, simply won’t be able to deny this fluffy Cranberry Pumpkin Cake. Although you don’t need any special occasion to add some sweetness to your life, you can make this recipe to make your parties and celebrations extra sweet and extra special.

Ingredients of Cranberry Pumpkin Cake

420 gm pureed pumpkin

450 gm all purpose flour

1 1/2 cup sugar

1/2 teaspoon salt

1/2 cup chopped walnuts

1 cup chopped cranberries

1 teaspoon baking soda

2 egg

How to make Cranberry Pumpkin Cake

Step 1

Take two big bowls; mix together flour, baking soda, sugar and salt in one, and pumpkin, eggs and oil in the other. Now you have got two separate mixtures- a dry one in the first bowl and a fluid one in the second. Now pour in the fluid mixture into the dry one, all the while stirring it, until it is a little moistened. Sprinkle chopped walnuts and thawed cranberries into this combination.

Step 2

Grab hold of two loaf pans and coat them with cooking spray. Fill these pans with the prepared mixture and bake at 177 degrees C for approx 1 hour and 10 minutes. Check once by inserting a toothpick in the centre of the cake. If it comes out clean, then your cake is properly baked.

Step 3

Let the cakes sit for 10 minutes before removing from the pans so that they come out easily. Now remove the cakes from the pans and place them on the cooling racks.up canola oil/ rapeseed oil
