Consuming bitter gourd is beneficial from the point of view of health and today we are going to share its recipe with you.

Necessary ingredients :

Bitter gourd - 9-10 (small size),

Onion - 02 nos (chopped),
Mustard oil  - 04 tablespoons,
Coriander powder - 02 teaspoons,
Fennel powder  - 02 teaspoons,
Amchur powder - 01 tsp
Red chili powder - 1/2 tsp
Turmeric powder - 1/2 tsp,
Cumin seeds - 1/2 tsp
 Asafoetida - 01 pinch,
salt - as per taste.

To make stuffed bitter gourd, first, wash the bitter gourd properly. After this, peel them off with a knife. Add 1/2 teaspoon salt to the shavings and mix it and keep it for 15 minutes. Now cut the bitter gourds in length in one way in such a way that they remain connected on the other side. With the help of a knife, remove the seeds and pulp inside the bitter gourd completely. Separate the seeds from it and keep the pulp in a bowl.

Now take ground salt and apply it inside and outside the bitter gourd and keep it for 30 minutes. Then wash them. Also, wash the shavings of bitter gourd with water 2-3 times. Put a big spoon of oil in a small pan and heat it. When the oil is hot, add asafetida and cumin seeds and fry it. After this, add chopped onion in the oil and fry till it becomes golden. After roasting the onion add turmeric, coriander and fennel powder and fry it while stirring lightly.

Now add bitter gourd pulp, shavings, red chili powder, mango powder and salt to the pan and fry for 6-7 minutes while stirring. After this, turn off the gas. After this, cool the spices and fill them evenly inside the bitter gourd. Now put 3 tablespoons of oil in a pan and heat it. When the oil is hot, reduce the heat. Keep the bitter gourd in a pan and cook it covered for 5-6 minutes. After 5-6 minutes, open the lid and flip the bitter gourd.

Now turn the flame to medium and close the lid and cook for 5-6 minutes. Remove the lid after 5-6 minutes. Turn down the portion of the bitter gourd if it is not properly formed. In the same way, lower the bitter gourds in the middle and make more baked bitter gourd edges and bake once again in the same manner.
