necessary ingredients:

Full cream milk - one liter
Sugar - 3/4 cup
Cardamom - 1/2 table spoon
Almonds - 5-6
Pistachio - 5-6
Saffron - 3-4 threads

Method of preparation: To make Basundi, first of all, offer a non-stick pan on medium flame on the gas and add milk and let it boil. While the milk is heating, finely chop the almonds and pistachios. Reduce the flame to low until the quantity of milk is reduced to half. Boil it for at least 1 hour and stir it in between. Now add sugar to it and cook on low flame for about twenty five minutes, till the milk is thickened like rabri. While doing this keep stirring the milk continuously so that it does not burn. Add Ilyachi powder to it and cook again on low flame and for at least twenty minutes. Now add chopped almonds and pistachios and garnish with saffron. Your Gujarati dish Basundi is ready, let it cool down a little, serve it when it cools down.
