Healthy South Indian breakfast: Vegetable Upma

Vegetable Upma is a tasty and healthy dish as it contains lots of vegetable and is very easy to prepare. This is the perfect dish for the kids as it is colourful and full of nutrition.

Ingredients:

Semolina/sooji -1 cup

Onion - 1

Green chilli - 2 finely chopped

Ginger - 1 inch piece finely chopped

Carrot - 1 medium size

Capsicum - 1/2

Potato (small) - 1

Fresh/frozen Peas -10-15

Tomato - 1 small (optional)

Beans - 4-5

Ghee - 1/2 tsp

Salt needed

For the seasoning

Oil - 2 1/2 tbsp

Mustard seeds - 1 tsp

Urad dal - 1 tsp

Red chillies - 1-2

Asafoetida - a pinch

Curry leaves - a sprig

Preparation

Dry roast sooji until hot to touch. Chop all the vegetables finely and keep it aside.

Direction:-

1. Heat oil in a pan, add mustard seeds, when it sizzles, add urad dal, red chillies, asafoetida and curry leaves.

2. When urad dal turns golden brown, add finely chopped onions and saute till it becomes transparent.

3. Add ginger, green chillies and sauté a for a few more minutes.

4. Add all the vegetables and cook covered for 2-3 minutes. (Do not over cook).

5. Add 2 cups of water, needed salt and bring it to boil. When water starts boiling, add ½ tsp of ghee. Taste the water to check for salt, if it is slightly salty, it will be perfect once we add rava.

6. Reduce the heat to low, add the sooji gradually with one hand and stir continuously with the other hand, so that it does not form lumps.

7. Cover and cook on low heat. Once the water is absorbed, mix well and cook covered on low heat for 6-7 minutes, stirring in between.

Serve hot with any chutney !
