Ingredients Of Kathal Biryani (My Yellow Table)

500 gms Basmati rice

500 gms raw jackfruit

2 tsp red chilli powder

2 tsp turmeric powder

1 tsp dhania powder

1 tsp besan

2 cups yoghurt

250 ml oil

2 tsp ginger & garlic paste

2 cinnamon sticks

1 bay leaf

3-4 cloves

3-4 green cardamom

2-3 mace

2-3 green chillies

15-20 mint leaves

10 gms saffron

salt

For Raita:

1 cup yoghurt

2 garlic cloves

1 tsp red chilli powder

1 tsp roasted cumin

Salt

How to Make Kathal Biryani (My Yellow Table)

Soak rice for at least 40 minutes. Chop raw jackfruit & add salt, red chilli powder, turmeric powder, dhania powder and besan mix well.Sprinkle some water & deep fry it, Take yoghurt in a bowl, Add red chilli powder, turmeric powder, ginger & garlic paste, cinnamon sticks, bay leaf, cloves, green cardamom, slit green chillies, mint leaves, salt & mix well. Add fried jackfruit to it & marinate.Parboil rice with salt, green cardamom & oil.Strain the rice & layer the biryani. Add saffron, oil & drained rice water to it & cook for 10 minutes.

For Raita. Add browned garlic, red chilli powder & roasted cumin to yoghurt & mix well.
