Kesari Bhaat -
material :
Rice - 1 cup
Yellow color (eater) - a pinch
Saffron - 15 leaves
Green cardamom - 4
Sugar - 3/4 cup
Desi Ghee - 2 tsp
Water - 5 -6 cups
Bay leaf - 1
Cloves - 2
Whole Green Cardamom - 5
Chopped almonds - 1 teaspoon
Chopped cashews - 1 teaspoon

Method: Wash rice and soak it for half an hour. Soak saffron in half a bowl of milk and add yellow color to it. Peel and grind cardamom and cut cashews and almonds. After this, add water to the rice and boil it. After cooking the rice, drain the water and filter it and keep it aside. Fry cashews on a low flame till they turn pink on a plate. Then heat half a teaspoon of ghee in a heavy-bottomed vessel. Now after that add bay leaf, cloves and cardamom. Now add rice to it and then add sugar. Add the prepared saffron and a mixture of colors to it. Add ground cardamom, cashew nuts, and almonds. This way your saffron rice is ready.
