Ghevar is a traditional Rajasthani sweet, widely enjoyed across the country, especially during monsoons and weddings. Here’s a step-by-step guide to making delicious Ghevar at home.

Ingredients
½ cup ghee
Ice cubes
2 cups all-purpose flour (maida)
½ teaspoon lemon juice
½ cup cold milk
Water (for batter)
1 cup sugar
½ cup water (for syrup)

Preparing the Batter
Beating the Ghee: In a deep, wide pan, add ½ cup ghee and ice cubes. Whisk by hand until the ghee takes on a creamy texture and becomes white.
Mixing Flour: Add 2 cups of all-purpose flour to the whipped ghee and mix well.
Adding Milk and Water: Pour in ½ cup cold milk, followed by gradual additions of water, mixing continuously. Ensure the batter is neither too thin nor too thick, and free of lumps. Add ½ teaspoon lemon juice and continue stirring to combine.

Making Ghevar
Heating the Pan: Take a small, deep pan and heat refined oil or ghee.
Pouring the Batter: Fill the batter into a bottle with a small hole in the lid. Alternatively, use a ladle with caution. When the oil is hot, pour the batter in a thin stream to form layers.
Cooking: Fry until the Ghevar is golden and crisp. Remove and drain on paper towels. Repeat for each Ghevar.

Final Touch
Preparing Sugar Syrup: Cook 1 cup sugar and ½ cup water in a pan to make a sticky syrup.
Soaking or Drizzling: Either dip the Ghevar in the syrup briefly or drizzle the syrup over the Ghevar using a spoon.
Serving: Garnish with nuts, khoya, or rabri, and serve warm or cold to your guests.
