1 teaspoon cumin seeds
5-6 curry leaves
2 green chilies, finely chopped
3 onions, thinly sliced
1/4 teaspoon salt
1/2 teaspoon chaat masala
100 grams grated cheddar cheese
Bread slices
A handful of fresh coriander leaves
1 green chili
A pinch of salt
A pinch of sugar
Juice of 1/2 lemon
Instructions:
Prepare the Onion Mixture: Heat oil in a pan. Add cumin seeds and let them sizzle. Once the cumin seeds start to crackle, add curry leaves, green chilies, and sliced onions. Sauté for about 5 minutes until the onions are soft and slightly caramelized. Turn off the heat and add fresh coriander leaves, salt, and chaat masala. Mix well and transfer the mixture to a bowl. Combine it with the grated cheddar cheese and set aside.
Make the Coriander Chutney: In a blender, combine coriander leaves, green chili, salt, sugar, lemon juice, and a little water. Blend until you achieve a smooth paste.
Assemble the Sandwich: Spread the coriander chutney on both slices of bread. Place the onion and cheese mixture on one slice of bread. Cover with the other slice of bread. Toast the sandwich in the same pan used for the onion mixture, cooking until the bread is crispy and golden brown.
No-Bread Sandwich:
Ingredients:
1 cup semolina (sooji)
1/3 cup yogurt
1/2 teaspoon salt
Mixed vegetables (carrots, onions, potatoes, coriander)
1 packet Eno fruit salt
Cheese slices
Instructions:
Prepare the Semolina Mixture: In a bowl, mix 1 cup semolina, 1/3 cup yogurt, 3/4 cup water, and 1/2 teaspoon salt. Stir well and let it sit for a few minutes.
Add Vegetables and Eno: Chop your choice of vegetables and mix them into the semolina mixture. Add one packet of Eno fruit salt and 2 tablespoons of water to the mixture. Stir well to incorporate the Eno and vegetables.
Cook the Sandwich: Grease your sandwich maker with butter. Place 2 tablespoons of the semolina mixture onto the sandwich maker. Place a cheese slice on top, then add another layer of the semolina mixture over the cheese. Close the sandwich maker and cook until the sandwich is golden and cooked through.
