Ingredients for making Ghevar-
Maida = 250 grams
Milk = 50 grams
Ghee = 50 grams
water = 800 grams
milk = as required
ice = a few pieces
Ghee/oil = for frying
to make syrup
Sugar = 400 grams
water = 200 grams
Method of making Ghevar- First of all, take ghee in a vessel and put some pieces of ice in it and beat it with your hand, when the ghee starts looking like cream, then remove the ice and beat the ghee once again. After that, when the ghee starts to resemble cream, then add half the flour in it and beat it again. Now when the flour dissolves completely, add the remaining flour and mix it well after adding milk and water. After this, after about two minutes, again pour the flour mixture into the bowl and make two or three (of whatever thickness you want) one by one.
When the layer of Ghevar becomes of desired size in the pan, then do not pour maida solution on it and bake it well till it becomes golden. When it becomes golden, put a knife or sink in the hole made of Ghevar and take it out and hang it over a vessel so that all its excess ghee can be squeezed out. After baking all, prepare to make syrup. To make sugar syrup, mix sugar in water and cook it and make syrup of two strings. Now after the syrup is made, keep the Ghevar in a wide vessel and pour the syrup from above. After soaking in the syrup for about 15 minutes, take the Ghevar out of the syrup and put it in a steel rod or ladle and place it over a vessel, so that all the excess sugar stuck in it can be removed. Now put a layer of rabri on them and sprinkle chopped almonds, pistachios on top, serve and eat.
