Ingredients
- Vanilla wafers – 12 ounces
- White sugar – ¾ cup
- Cream cheese – 8 ounces
- 2 eggs
- Vanilla extract – 1 teaspoon
- Cherry pie filling – 21 ounces
Method
- Preheat your oven to 175 degrees C (350 degrees F) for 10 minutes.
- In a miniature muffin mould add miniature muffin liners.
- In a bowl, crush the vanilla wafers and add ½ a teaspoon in each miniature muffin mould .
- In another bowl add the cream cheese, sugar, egg and vanilla extract. Beat them until light and fluffy.
- Take a spoon and add equal amounts of the mixture to each miniature muffin liner.
- Put it in the oven and bake for 15 minutes.
- Check with a fork or toothpick, if it comes out clear. Its ready.
- Cool and top them with a teaspoonful of cherry pie filling
