Ingredients

  • Vanilla wafers – 12 ounces
  • White sugar – ¾ cup
  • Cream cheese – 8 ounces
  • 2 eggs
  • Vanilla extract – 1 teaspoon
  • Cherry pie filling – 21 ounces

Method

  • Preheat your oven to 175 degrees C (350 degrees F) for 10 minutes.
  • In a miniature muffin mould add miniature muffin liners.
  • In a bowl, crush the vanilla wafers and add ½ a teaspoon in each miniature muffin mould .
  • In another bowl add the cream cheese, sugar, egg and vanilla extract. Beat them until light and fluffy.
  • Take a spoon and add equal amounts of the mixture to each miniature muffin liner.
  • Put it in the oven and bake for 15 minutes.
  • Check with a fork or toothpick, if it comes out clear. Its ready.
  • Cool and top them with a teaspoonful of cherry pie filling
