necessary ingredients :
500 gram mustard green leaves
150 gram spinach
100 gram Bathua
250 gram tomatoes
2 cups of water
1/4 cup maize flour
3 green chillies
1 piece ginger
1 piece Asafoetida
1/2 tsp cumin seeds
1/4 tsp turmeric powder
1/4 tsp red chilli powder
2 tsp ghee
2 tsp oil
Salt to taste
Recipe:
To make Sarso Ka Saag, first of all clean the leaves of spinach, mustard and batheu thoroughly and wash them once with water so that the dust inside them gets cleaned. Now cut all the leaves a little thick and put them in the cooker, add water and keep it for boiling. Wait for the whistle to come. Turn off the gas on one whistle and leave it to drain. Now grind the ginger, tomato and green chillies in a grinder and grind them finely. Now heat oil in a pan, add corn flour and fry it well. After roasting, take out the dough in a plate and add asafoetida and cumin seeds to the remaining oil. After roasting cumin, add turmeric, tomato ginger paste and red chilli and roast all the spices well. After some time the spice will start leaving the oil. Now take out the boiled leaves from the cooker and grind them finely in the grinder. Add these ground leaves to the roasted spices in the pan and mix well. Also add corn flour.
Add water as required to this mixture, add salt and mix it with the help of a spatula. Leave the greens on the gas for a while. Leave the greens on the gas for 5-6 minutes, if your saag is cooked, turn off the gas. Your delicious Sarso Ka Saag is ready, take it out in a bowl, add ghee and serve it with hot rotis and parathas.
