In between this global pandemic, it is extremely necessary to have a healthy and clean diet to maintain better immunity. Khichdi is primarily a porridge which is considered one of the first solid foods that babies eat. It’s a comfortable and tasty dish that you can’t get away from. Khichdi is generally made with lentils and rice.
But this time try this quinoa khichdi as it has its own benefits. It’s not only nutritious but also helps in weight loss. Generally topped with a dollop of desi ghee, Khichdi can make for a wholesome and healthy meal.
Ingredients for khichdi:
White Quinoa
Yellow Moong Dal
White onion
Grated or minced ginger
Other Veggies
Turmeric powder
Coriander powder
Garam Masala Powder
Cumin seeds
Bay leaf
Dry whole red chili
Ghee
coriander leaves
lemon juice
Method:
1. Temper the ghee. When it’s moderately hot add whole cumin seeds and bay leaf. Allow them to sizzle for a few seconds.
2. Throw in the onion & saute until a little soft. You may add salt at this point to quicken the process.
3. Add some veggies like peas, chopped beans, and carrots. Saute for 1 min & add the tomatoes. Saute for 1 min.
4. Add the grated ginger & mix in well. If you want to add chopped green chilies, you may add them now.
5. Add turmeric, coriander powder & garam masala powder. Mix well & saute for about a minute or until fragrant. If you want to add red chili powder you may add now.
6. Add the rinsed Quinoa and moong dal
7. Mix well. Adding warm or hot water helps in quick pressure build up in the Instant Pot.
8. Pressure cook it for 4-5 mins. Garnish it with coriander and lemon juice.
