Material for making Rabri of sweet potato-
Milk – 1 litre
Sweet potato – 1 kg
Sugar – 1 cup
Cardamom powder – 1 tsp
Cashew nuts cut – 5
Almond chopped – 5
Pistachios cut – 5
Saffron – 1 pinch
Method of making a Rabri of sweet potatoes- To make it, first, boil the sweet potatoes, when the sweet potatoes become soft by boiling, take off their peels. Now mash everyone well after that. Now put them aside. After this, take a large pot and put the milk in it to warm up. Now when the milk starts to boil lightly, add the mashed sweet potatoes in it and mix well. After this, cook these two things until the milk is thick. Now take another pan and heat it by adding a cup of water to it. When the water is hot, add a pinch of saffron to it. After this, when the saffron is dissolved, mix it with the milk and keep the Rabri running well with the help of a spoon. Now you add cardamom powder to the Rabri and mix well. Then let the Rabri cook on a medium flame for at least 5 minutes. After this, when the Rabri is well cooked, add sugar to the taste and mix well with the help of a spoon. Now cook the Rabri further for two to three minutes after which turn off the gas and leave the Rabri to cool down.
