Yes, the stuffed vegetable made at weddings is very much liked. Now today we are going to tell you the stuffed tomato recipe, which will be eaten licking all the fingers. It is very easy to make this stuffed tomato and everyone in the house will ask for it again and again to eat it.

Ingredients for making stuffed tomatoes-

Tomatoes - 400 to 500 grams of small size

Besan - 2 tbsp

Coriander - 2 tbsp

Red chilli powder - 1 tsp

Turmeric powder - 1/2 tsp

Salt - to taste

Peanut powder - 2 tbsp

Cashew powder - 2 tbsp

Grated jaggery - 2 tsp or as per taste

Coriander leaves - a fist cut

Oil- 3 to 4 tbsp + as per requirement

Method of making stuffed tomatoes- First of all wash and dry the tomatoes and then make a cross slit from the top and keep it aside. Now take a bowl after that and add besan, coriander powder, red chilli powder, turmeric powder, salt, peanut powder, cashew powder, grated jaggery, and green coriander. Now add a little oil to mix all the ingredients. Fill the prepared mixture with the tomatoes. After this, heat 3 to 4 tablespoons of oil in a pan. When it is hot, add cumin seeds, rye, and asafoetida. Then add the tomatoes. Run it lightly. Now cover it with a plate, and put a little water on the plate. Let it cook on a low flame for 10 to 15 minutes. After 10 minutes, check if the tomatoes are soft or not. During this time, if the tomatoes are not soft, cook it for another 5 to 7 minutes. Now add the remaining stuffing in the pan when the tomato is soft. Then mix it with light hands. Let it cook for a minute, then turn off the flame. Decorate the dish with coriander leaves. Take the delicious stuffed tomatoes ready to be served.
