Ingredients for making Makhana Cashew Curry-

Cashew - 1 cup
Makhana - 1 cup
Cream - 1/2 cup
Onion - 1
Garlic - 5 buds
Green peas - 1/2 cup
Tomato - 2
Ginger - 1 inch piece
Green chili - 4
Red chili powder - 1/2 tsp
Coriander Powder - 1 tbsp
Kasoor Methi - 1 tsp
Turmeric Powder - 1/2 tsp
Garam Masala - 1 tsp
Cloves - 5
Green cardamom - 2
bay leaf - 1
Sugar - 1/2 tsp
Cinnamon - 1 piece
Green coriander chopped - 1 tbsp
Oil - 2 tbsp
Salt - as per taste

Method of making Makhana Cashew Curry- First of all, chop the onion, green chili, garlic and ginger roughly and then grind them with the help of a mixer. Now cut the tomatoes and grind them in a mixer. Keep both the pastes in separate bowls. Now put oil in a pan and keep it to heat on medium flame. When the oil becomes hot, add cashew nuts and fry till it becomes light brown. After this, take out the cashew in a plate and keep it aside. After that put makhana in the same pan and fry it till it becomes crispy. When the makhanas become crispy, take them out in a bowl. Now put some more oil in the pan and fry it by adding bay leaves, cardamom, cinnamon and cloves.

When this masala is roasted well, then add onion paste to it and fry it till it becomes golden. When the onion paste is fried, then add red chili powder, coriander powder, garam masala, kasoori methi and mix all well and let it fry for about 1 minute. Now after the onion and spices are fried well, add tomato paste and green peas to it. Now let it cook on medium flame for three to four minutes. When the masala starts leaving the oil, add cream and cook for another 2-3 minutes. Now after this add a cup of water, salt as per taste and half a teaspoon of sugar and let it cook till it comes to a boil. When the puree comes to a boil, add fried cashew nuts and makhana and cook for at least 2 minutes. After that turn off the gas flame. Take this way your delicious Makhana cashew curry curry is ready.
