Veg Kurma Recipe - A great dish for vegetarians!

For the Masala:
  • 1/2 cup fresh or desiccated coconut
  • 12-15 cashews
  • 1 garlic clove
  • 1 inch ginger
  • 3 to 4 green chillies
  • coriander leaves
  • 1/2 tsp fennel seeds
  • 1 tsp coriander seeds
  • 2 tsp poppy seeds
  • 1/2 cup water to blend

Vegetables:

  • 1/2 finely chopped onion
  • 1 carrot cubed
  • 1 finely chopped tomato
  • 1/4 cup fresh or frozen peas
  • 7 to 10 cauliflower
  • 1 chopped potato
  • 4 chopped beans

Other ingredients:

  • 1 inch cinnamon
  • 3 cloves
  • 1/2 its pepper
  • pinch of turmeric powder
  • 3/4 tsp kashmiri chilli powder
  • salt
  • 1 cup water
  • 2 tsp oil
  • few coriander leaves

Method:

  • Blend all the masala ingredients in a blender to a fine paste.

Veg kurma recipe

  • Take a kadai and add 2 tsp of oil
  • Add the cinnamom stick, cloves and pepper and saute for a while
  • Add onions and saute till the onions turn golden brown
  • Now, add the tomatoes and saute till the tomatoes turn soft
  • Add the vegetables
  • Add turmeric,chilli powder and salt
  • Add 1 cup of water and cook for 15 minutes
  • Add prepared masala paste and simmer for 10 minutes
  • Finally, garnish with fresh coriander leaves and serve.
