Ingredients for making crispy brinjal- 
11 small eggplants
4 cloves garlic
1/2 cup peanut powder
2 medium onions
2 tbsp vegetable oil
2 red peppers
1 1/2 cup coconut milk
2 tbsp pomegranate juice
9 Curry leaves
salt as per requirement
2 tbsp mustard seeds
2 tsp dry amchur powder 

Method of making chatpata brinjal- To make chatpata brinjal, first heat oil on medium flame. When the oil is hot enough, add rye, red chilli and curry leaves.   Now fry for about a minute and then add chopped onions and minced garlic. Cook well for 2-4 minutes. After this, add peanut powder, amchur powder to this mixture and cook continuously and cook the mixture for about 5 minutes. Now after this, add pomegranate juice or pomegranate jaggery and coconut milk to the eggplant. Cook all well so that all the ingredients mix well and serve the choppy brinjal hotly garnished with a pinch of amchur.
