Yummy Caramel Bread Pudding - try this one out!

You will need:

  • Whole Milk – 1 1/2 cups
  • Bread – 4 slices
  • Sugar – 3/4 cup (or more as per taste)
  • Eggs – 2, large
  • Vanilla extract – 1 tsp
  • Salt – a pinch 1/4 tsp

For the caramel sauce coating:

  • Sugar – 2-3 tbsp
  • Water – just enough to moisten the sugar

Method

  • Heat the milk in a saucepan. 
  • Tear the bread slices into small pieces and add to the milk.
  • Let it soak for about 5-10 minutes.
  • Mash the softened bread slices so that no large lumps remain.
  • Add the sugar, salt and the vanilla extract to the milk mixture and combine well. Taste and see if more sugar is required.
  • Beat the eggs in a bowl, and add the eggs to the milk mixture and combine well.
  • To prepare the caramel sauce use a metal bowl, add the sugar and water, and heat till it becomes a golden syrup.
  • Spread the caramel sauce evenly on the bottom of the bowl.
  • Let it cool for 5-10 minute and pour the pudding mixture carefully on top of the prepared caramel sauce. Fill the bowl 2/3rd full only.
  • Cover with a lid and pressure cook for 15-20 minutes.
  • Remove from cooker and leave to cool
  • Once cool turnover in a plate and serve.
