Ingredients:
4 potatoes (cut into small pieces)
6 tbsp oil
2 tsp red chilli powder
1 tbsp coriander powder
1 tsp salt
1 tsp mustard seeds
8-10 curry leaves
½ tsphing
Preparation:
1. Cook the potato pieces in boiling water for about 5 minutes
2. Remove them from the boiling water and drain out any excess water
3. Take 2 tbsp of oil in a pan and heat it over a high flame
4. Add the potato pieces into the oil and fry till slightly brown
5. Remove from the pan and drain out oil using paper towels
6. Let the potatoes cool down completely
7. Heat 2 tbsp of oil over high heat and add mustard seeds
8. When they start to sputter, addhing and curry leaves, sauté until aromatic
9. Take the remaining oil in a pan and fry the potatoes for a second time, till golden brown
10. Garnish with a few mustard seeds and curry leaves.
