Ingredients:
2½ cup grated gourd
1 cup of milk (250 ml) Fat milk
3 tbsp condensed milk
2 tbsp ghee (butter)
3 tbsps sugar
10 cashews, cut into pieces
10 almonds, cut into pieces
15 raisins
1/4 teaspoon of cardamom powder
Method:
Peel gourd and grate it. Squeeze it out of the grated gourd to extract extra water. Now, Heat the ghee on medium flame in a pan. Put gourd in it. Run it continuously with a spoon and roast it for 3-4 minutes. Insert fat milk and condensed milk; Mix well and keep the mixture to boil.
When the mixture starts to boil then reduce the flame and let it cook till it thickens. It will take about 10-15 minutes. Keep it running with a spoon in the middle to prevent it from sticking (burning). Add sugar, chopped cashews, raisins and chopped almonds.
Keep stirring continuously with a spoon until the mixture becomes thick and till the moisture becomes dry. It will take about 3-4 minutes. Turn off the gas. Insert cardamom powder and mix it well. Delicious gourd pudding is ready to serve. Put it in the bowl and serve it.
