You need cholesterol to make hormones and vitamin D, digest your food, protect your nerves and for the production of cell membranes. Levels of cholesterol are not higher in fatty meats or lower in lean meats. Like your body cells, the cells of all mammals contain cholesterol. Understanding your cholesterol ratios is more important than looking at a single number.

High cholesterol can be dangerous, but cholesterol itself is essential to various bodily processes, from insulating nerve cells in the brain to providing structure for cell membranes.
