Ingredients
- Baby salad leaves (spinach, tender cabbage, lettuce) – 4 cups
- Diced mango - 1/2 cup
- Cubed seeded watermelon - 1/2 cup
- Fresh mint - 1 tablespoon
- Feta cheese - 1/4 cup
- Red onion - 2 tablespoons
- White balsamic vinegar - 1 tablespoons
- Olive oil - 1 tablespoons
- Mango juice - 1 tablespoons
Method
- In a bowl whisk together the vinegar, mango juice and olive oil.
- In another bowl mix together the mango, baby greens, watermelon, mint, feta cheese and minced onion.
- Pour the vinegar, olive oil and mango juice mixture over the salad.
- Toss gently and evenly coat.
