This mouthwatering Thai soup recipe will make you try this recipe over and over again!!!
Ingredients
King prawns – 500 g (Head removed andreserved for stock)
Vegetable oil – 2 tablespoon
Minced garlic – 1 tablespoon
Lemon grass - 2 sticks
Lime leaves - 5
Onions - 5
Ginger – 5
Green chillies – 10
Chilli paste - 1 tablespoon
Lime juice - 4 tablespoons
Squid – 2 large
Baby corn – 125g
Mushrooms – 100g
Tomatoes – 3
Coconut milk – 100ml
Salt to taste
Method
Make the stock
Take 1 litre of water in a large pan and bring to boil.
Add the prawns heads only and simmer for 15 minutes.
After 15 minutes, remove the heads and the stock is ready.
In a pan heat oil and add garlic, lime leaves, onions, lemon grass, ginger and chillies, sauté on medium heat for 3 minutes.
Add chilly paste and fry for 1 minute.
Add the chicken breast and pour in the lime juice. Simmer for 5 minutes.
Mix the mixture into the stock and boil.
Add the squid, baby corn, mushrooms, tomatoes and prawns.
Lower the heat and add the coconut milk and simmer for 5 minutes.
Add salt and serve .
