Eventually, such toxins cause damage at the cellular level and lead to diseases like cancer. When smoked food are cooked at high temperatures, the nitrates are converted to the much more dangerous nitrates.

They have detected acrylamide in foods such as fried potatoes, crisp, crisp breads and breakfast cereals. Levels appear to be highest in foods that have been cooked at high temperatures for long periods. Acrylamide food appears to be produced naturally as a result of baking or frying.
