Enjoy Mix Vegetable Sambhar

Ingredient:

1/3 cup tur dal (Arhar Dal) 1/4tsp turmeric powder 1 cup chopped mixed vegetables 1/2tsp mustard seeda 5-6 Curry leaves 1-2 dry red chillies A pinch of asafoetida 1 medium onion, finely chopped (about 1/3 cup) 1tbspsan sambhar masala powder 1 /2 tbsp tamarind seedless 1 tomato, finely chopped (about 1/3 cup) 1 tbsp oil 1 cup + 1½ cup water 1 tbsp spoon finely chopped coriander salt to taste

Method:

Insert tur dal, turmeric powder and 1 cup water in a 3-4 liter capacity steel or aluminum pressure cooker. Put mixed vegetables in a small dish and put the box inside the pressure cooker. Close the lid of the cooker and cook it for 3-4 whistles on medium flame. In this recipe we have used 1/4 cup potatoes, 1/4 cup brinjal, 1/4 cupcarrots and 1/4 cup French beans.

Turn off the gas and let the cooker cool down. When the pressure of the cooker is over, open its lid and remove the box of vegetables. Mash the pulse using a spoon or blender. Heat a tablespoon oil in a pan over medium flame.

Insert the mustard seed when it gets crackled, add curry leaves, dry red chillies and asafetida and fry for 10-15 seconds. Insert the chopped onions. Roast onions until light pink. Add water of tamarind and cook for 2-3 minutes. Insert the chopped tomatoes. Roast till tomatoes become soft. Insert Sambhar powder.

Run with a spoon and roast for one minute. Put boiled and mashed pulses, boiled vegetables, 1½ cups of water and salt. Mix well and let it boil. Give boiling for about 5-7 minutes. Turn off the gas. Stir in a bowl and decorate it with finely chopped green coriander.
