Ingredients for fasting pulao- * 1 cup sama rice / sambo rice / morio / samwat / barnyard millet * water, for soaking * 1 tbsp ghee * 1 tsp cumin * 3 pods cardamom * 1/2 tsp black pepper * 1 inch ginger, finely chopped * 2 chilies, slit * 1/2 potato, cubed * 1/2 carrot, diced * 2 cups water * 1/2 tsp rock salt * 1/2 tsp black pepper powder Other Ingredients: * 1/2 tbsp ghee * 2 tbsp peanuts * 5 almonds, halved * 10 cashews, halved * 2 tbsp dry coconut, chopped * 1/2 cup Makhana / Fox Nuts * 1 tbsp lemon juice * 2 tbsp coriander leaves, finely chopped Recipe for fasting pulao - firstly, in a large bowl soak 1 cup sama rice for 20 minutes. After that in a large pan, add 1 tbsp ghee, 1 tsp cumin, 3 pods cardamom and 1/2 tsp black pepper. Do it a little bit. Now after this add 1 inch ginger, 2 chilies and mix it well. After this add 1/2 potato, 1/2 carrot and cook for 3 minutes or till it is half cooked. Now add soaked sama rice. Be sure to drain the water completely. Now add 2 cups water, 1/2 tsp rock salt, 1/2 tsp black pepper powder and mix well. After that put the lid on and keep on simmer for 15 minutes or till the sama rice is completely cooked. Now on the other side in a pan add 1/2 tbsp ghee, 2 tbsp peanuts, 5 almonds, 10 cashews, 2 tbsp dry coconut, 1/2 cup makhana. After this, fry on low flame till they become crispy and golden in colour. Now put the roasted nuts over the casserole and mix by adding 1 tbsp lemon juice and 2 tbsp coriander leaves. Mix well. Take pulao is ready.
