Here’s what you need: 500 gm Basmati rice 500 gm yoghurt [curd] 5 green chillies 1/4 cup lime juice 1/2 pinch black cumin seeds 5 mint leaves 2 drops of edible food color 11/2 cups of vegetable oil Salt as required 1 Kg boneless chicken 5 teaspoon ginger paste 12 onion 5 coriander leaves 2 cloves 1/2 teaspoon red chilli powder 5 teaspoon garlic paste 3 tsp ghee Now follow the given steps: Wash the boneless chicken, boil it in a pan, later pat it with a cloth. Marinate the chicken with ginger garlic paste and let it absorb the flavours. Chop onions, coriander and mint leaves. Fry the onions in a pan. Now grind fried onions. Add yoghurt, red chilli powder, cinnamon, green chilli paste, cardamom, black cumin seeds, coriander leaves, clove, saffron, mint leaves salt and also the crushed onions to the pre-marinated chicken. Again let the chicken absorb flavours. Take a vessel, and cook basmati rice in it along with water for some time. When it is partially cooked, rinse-off the water. Take a cup of water and to it, add salt, cinnamon, clove, cardamom, mint leaves and coriander leaves, to provide aroma. Take another vessel, on its bottom spread a layer of rice, mixed with lime juice, food colour and the aromatic water mixture. Now place marinated chicken over it. Place next layer of rice. Cover the vessel with a lid and cook it on a low flame. After cooking for 15 minutes, put the flame off. Remove the lid and garnish your Biryani.
