1 cup sago, 1/2 cup peanuts, 2 tbsp ghee, 1 tsp cumin, 3 to 4 whole dry red chilies, 4-5 curry leaves, 1 tsp white rock salt, 1 tsp chili powder, 1 tbsp coriander leaves, 1 teaspoon lemon juice

Wash the sago first. Soak it for one hour in water. Take it out of the water now. To the sago, add roasted peanuts, salt, and chili powder. Warm up some ghee in a pan. Cumin seeds, whole dry red chilies, and curry leaves are now added. When the red chilies begin to turn black, add the sago mixture and cook for a few minutes on low heat. Turn off the gas now.

2. Zucchini Pasta

2 tablespoons olive oil, 2-3 zucchini, 2 green chilies, 3 to 4 garlic cloves, 2 stalks of green onions, 100 grams of spaghetti, 6 to 8 cherry tomatoes, salt and pepper to taste

When a pan is hot, add the oil and zucchini. After that, add the chopped green chilies, onions, and garlic. Season with salt and pepper to taste. Cook the spaghetti in salted, boiling water. When it's done, add it to the zucchini mixture. Fry while stirring occasionally, and serve when done.

3. Oats Idli

1/2 cup oats, 1 tsp baking soda, salt as per taste, 1 tsp green chilli, 1 tsp asafoetida, 2 tsp mustard seeds, half cup semolina, half cup peas, 1 handful coriander leaves, 1 tbsp curd, 1–2 carrots, half cup buttermilk

All of the vegetables should be washed and chopped. Dry roast the oats, allow them to cool, and then grind them into powder. After that, dry roast the semolina, let it cool, and then combine it with the roasted oats.

Now, in a pan, heat the oil and add the mustard seeds. After a few seconds, add the chopped vegetables, peas, and finely chopped green chilies and cook for about a minute. Then add the oat mixture, salt, asafoetida, coriander leaves, baking soda, curd, and buttermilk. Combine the ingredients, cover, and set aside for a few minutes. Pour the batter into the idli plates and serve immediately.

4. Egg Chaat

Material

3 boiled eggs, 1 tsp tomato chili sauce, 3 tsp tamarind extract, 1 tsp lemon juice, 1 tsp roasted cumin powder, salt as per taste, 1 green chili, 1 chopped spring onion

Recipe

Add tomato chili sauce, tamarind extract, lemon juice, roasted cumin powder, finely chopped green chilies, and salt to a mixing bowl. Cut the boiled eggs in half and spread the chutney on top. Serve with chopped spring onions and garam masala for dinner.
