- ROBIN FISH: “Gurnard”, commonly known as Robin Fish is majorly found in Newzealand, Hawaii, and on the east coast of the US. It is caught as a bycatch. Its flesh is sweet since it feeds on molluscs and crabs. They have fins resembling those of butterflies. The best part about them is that they do not have lots of tiny bones and come with a meaty fillet.
- JOHN DORY: Mainly found in the eastern Pacific areas is counted amongst the fishes you could ever taste. The fish has a tall fillet due to its laterally compressed body. John Dory can be baked in an oven and can also be used in making a fish stock.
- ITOYORI: found on the west coast of America, it is more commonly known as “sharp-tooth snapper”. it has a meaty texture and is known for its mild flavour. These fishes are mainly used in the preparation of “sashimi or sushi”, a major dish of Japan.
- YELLOW BACKED BREAM : these fishes are certainly more delicate than the Itoyori and are super delicious. It crisps up beautifully in a pan and offers great taste.
