Ingredients of Badam Ka Harira

200 ml milk

15 almonds

2 clove

1 green cardamom

1 cup water

3 tablespoon rice

1 tablespoon ghee

1 inch cinnamon stick

3 tablespoon sugar

1 tablespoon coconut milk powder

How to make Badam Ka Harira

Step 1

Firstly, put a pan on medium flame and boil milk in it. Once the milk is boiled, set it aside to come down to room temperature. Meanwhile, soak rice in water for half an hour. Also soak some almonds for two to three hours, peel the skin and set it aside.

Step 2

Now, take a grinder jar and add the soaked almonds in it along with soaked rice and coconut milk powder. Grind it all into a smooth paste by adding some water.

Step 3

Now, place a clean kitchen cloth or muslin cloth over a big bowl and empty the contents of the jar. Bring the ends of the cloth together and squeeze the liquid into the jar. Repeat this process at least 2-3 times by adding little water to the contents of the cloth and then set the liquid aside or you can also use a fine sieve instead of cloth to extract the liquid.

Step 4

Now, place a skillet over medium flame and add some ghee into it. Once the ghee is melted, add clove, cardamom and cinnamon stick in the skillet. Saute the whole spices for a few seconds and then reduce the flame. Now add the extracted liquid to the fried mixture slowly and stir the mixture continuously to avoid lumps.

Step 5

Continue stirring until the liquid thickens and turn into a smooth paste. While continuously stirring the mixture, add in some milk and sugar. Bring this to a boil and then turn off the gas. Serve the badam harira hot or serve it chill. Enjoy!
