Ingredients: 1/2 cup garlic buds peeled, 3 tablespoons mustard oil, 1/4 teaspoon turmeric powder, 2 teaspoons lemon juice, 1 teaspoon chilli powder, 1 teaspoon jaggery at will, 1/2 teaspoon salt

For the spices: 2 teaspoons mustard seeds, 1/4 teaspoon fenugreek, 1/4 cumin, 1/4 teaspoon whole coriander, 1/4 teaspoon asafoetida

Method: To prepare the pickling spice, mix mustard seeds, fenugreek, coriander, cumin and asafoetida in a vessel, and fry them lightly. Then grind them in the mixer without using any water. Now heat the non-stick pan. Always use mustard oil to make pickle as it enhances the flavour along with the fragrance. After the oil is hot, add garlic to it. After this, add turmeric and fry it on low flame while stirring continuously for 3-4 minutes. After the aroma of the rawness of garlic is gone, add powdered spice. Add salt. Garlic pickle is ready, which you can enjoy in the airtight box for many days.
