Ingredients - Four eggplants
Two spoons of oil
A spoonful of mustard
A spoon cumin
A pinch of asafoetida
Eight-ten curry leaves
Two cups cold yoghurt
Black salt according to taste
½ teaspoon red chilli powder
Half a teaspoon of roasted cumin powder
A finely chopped green chilli
½ teaspoon sugar
Salt according to taste
Method- Cut Brinjal into very small pieces. Now heat two spoons of oil in the pan, add eight-ten curry leaves, a pinch of asafoetida, one teaspoon of mustard seeds and one teaspoon of cumin seeds. After this, when the cumin starts crackling, add the brinjals in the pan and sprinkle a little salt in it and mix the brinjals well and cook on a slow flame for four to six minutes till they become soft. Now turn off the gas. Now to make raita, take two cups of cold yoghurt in a vessel and whisk it well. Now add black salt, half a teaspoon red chilli powder, half a teaspoon of roasted cumin powder, a finely chopped green chilli and half a teaspoon of sugar to it and beat the curd according to your taste. After this, when the fried brinjal cools down, add it to this curd mixture and serve this unique eggplant raita.
